Jill’s Almond Flour Chocolate Chip Cookies
Ingredients
1/2 cup grass-fed butter, softened (I prefer Kerrygold)
1/4 cup coconut sugar*
1/4 cup raw sugar*
1 teaspoon pure vanilla extract
2 organic, free-range eggs
2 1/2 cups blanched almond flour (not almond meal)
1 1/2 cups chocolate chips (I prefer Enjoy Life or Simply Balanced)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/4 heaping teaspoon sea salt
Preparation
* Alternatively, you may use 1/2 cup of coconut sugar or raw sugar instead of using 1/4 cup of each. It will change the flavor profile a bit but is delicious either way!

1 1/2 cups chocolate chips (I prefer Enjoy Life or Simply Balanced)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/4 heaping teaspoon sea salt
Preparation
- Preheat oven to 350 degrees and line 2 baking sheets with parchment paper.
- In a large bowl, beat together butter, sugar(s) and vanilla extract. Then beat in eggs.
- Stir in almond flour, cinnamon, baking soda and sea salt. Mix well.
- Stir in chocolate chips.
- Drop tablespoons of dough 2 inches apart onto baking sheets (you should end up with about 26 large cookies).
- Bake for 12-15 minutes or until lightly browned on top. I find that almond flour doesn’t brown quite as much as wheat flour so be sure not to overcook them!
- Let cool and ENJOY :)
